Even if a wine-maker has no control over the climate and the soils, there are numerous other factors allowing them to influence the final character of their wines:
- Grape varieties planted
- The trellising
- Wine vinification
- The ageing
All the elements/choices shown in the following pages represent a philosophy, a way of obtaining certain qualities which we want for our wine. This is in no way the search for absolute perfection but more a series of decisions taken by the wine-maker all throughout the year in order to obtain the wine he wants.
Keep in mind that each year these choices are reconsidered depending on the production year conditions (rainfall amount, hours of sunshine,...)
