- We have chosen a high-end stainless steel vat from a French company in order to gain in precision on the control of fermentation temperatures and facilitate their cleaning in order to reduce our water consumption.
- The walls are massive stones of the Luberon to limit the use of air conditioning and reduce our energy consumption. The roof of the cellar will be equipped by November with solar panels that will cover a large part of the energy needs.
- Finally, the two large bay windows positioned on both sides allow natural light to enter and dominate part of the terroir of Châteauneuf-du-Pape.
